Mixed vegetable,chicken with salad and Garlic bread


Ingredients for Garlic bread
garlic - 6-7 pods , chopped fine
green chillies - one, chopped fine
Mozzarella cheese - grated
salt if needed
Preheat the oven to 350 degrees
Cut bread rolls into half , spread the garlic, chilles and grated cheese and keep in the oven, shut off the oven, the heat is enough to toast it. keep for 5 mins or as crispy as required.

Ingredients for salad

Lettuce - 5-6 leaves, sliced nicely
Carrot - 1 , grated
Lime juice - 3 tsps
salt, pepper - to taste
chunks of feta or grated mozzarella or cheddar cheese - half a bowl
toss well.

Ingredients for mixed vegetables and chicken

Chicken - one pound breast , diced big
Green bell pepper - one big
Yellow or any other color bell pepper - one big
Mushrooms - 5-6 sliced
Onion - one big
Beans/ Spring onions
Garlic - 3 pods
milk - half cup
red chilli powder or black pepper powder - 1/2 tbsp
oil
garam masala or any curry powder - 1/2 tbsp
turmeric powder - 1/4 tbsp
Rosemary, basil, Oregano - 1/2 tsp each or any italian seasoning

Pressure cook the chicken pieces with the milk, chilli or pepper powder, turmeric powder, salt, garam masala powder for 2 whistles. or till cooked if cooking in the open. Keep the stock.
Fry in oil , add sliced onions, chopped garlic, add the peppers and mushrooms and fry with salt for 5 mins, add the chicken stock and cook for another 5 mins. Add chicken pieces , some rosemary, basil and Oregano and cook all together for 10 mins, till the water evaporates. Serve with the garlic toasted bread and salad. Enjoy!
