Hari Chutney (green spicy sauce) sandwiches.


Ingredients for chutney:

Mint leaves - One soup bowl
Coriander leaves - One soup bowl
Green chillies ( thinner Indian jalapeños) - 2 (for spicy taste)
Garlic pods - 5-6
Cummin seeds - half tsp.
Peanuts - dry fried and de-skinned - 5-6 (more if you like the consistency to be thicker and the mint flavour subdued)
Lime juice - small half a lemon
Salt to taste

(optional  for reduced spice)Sugar - quarter tsp or small piece of jaggery

Grind all the ingredients together in a blender adding water carefully.

Ingredients for sandwiches:
Wheat or white bread fresh or toasted slices, cut out the corners.
Cucumbers- thin sliced
Boiled potato - sliced
Tomatoes - sliced
Butter - (keep it out of fridge before half hour so that it is soft and spreads easily)
On one slice spread the chutney and on the other spread the bread. Arrange the potato, tomato and cucumber slices and close them to make a sandwich. Grill it if you want to add another taste to your palate. Enjoy!
