Zeera rice without onions and garlic


Ingredients:

Rice (basmati or sona masoori) - 3 glasses ,cooked and left with lid open for 10 minute to dry a bit
Ginger paste - 1 table spoon
Cloves - 3
Cinnamon - 2 one inch
Zeera or cummin seeds - 2 teaspoons
Green chillies - 2 , slit
Bay leaves - 2-3
Oil - 2 - 3 teaspoons 
Salt to taste
Coriander leaves for garnish (optional)

Method:

Heat oil, maintain medium heat when hot, add cloves and cinnamon , add zeera, green chillies, bay leaves, paste and fry well. Reduce the heat to the minimum, add the boiled rice slowly, so to keep it dry. Add salt. Then gently but thoroughly mix the rice. Cover it and shut off the flame/heat. Keep it for 10 minutes before serving.
