Eggless Banana Cake




On request from near-and-dear and today being "eggless" Saturday, I decided to make an Eggless Banana Cake. The result after an hour of work, baking included seemed positive from the number of recipe requests I received. It doesn't go without saying that the cake was finished in no time.

So here is the recipe.

Ingredients:

Ripe Bananas(ready for Panchamritham :)) - 2
Milk (3.25%) - 1cup
Sugar - 1 1/4 cup
Butter(unsalted) - 1stick (125g)
Vanilla essence - 1tsp
Baking Powder - 1tbsp
All purpose flour - 1 1/4 cup
Almonds on the top - optional

Method:

Add ingredients while beating continuously.
  • In a mixing bowl, mash the bananas to soft (non-lumpy) consistency.
  • Add melted butter.
  • Add milk.
  • Add the vanilla essence.
  • Add sugar.
  • Mix baking powder into all-purpose flour in a separate container.
  • Add the flour spoon by spoon into the mix while beating steadily.
  • Beat continuously until thoroughly mixed.
  • Preheat oven to 365F.
  • Grease the mould(8 inch) and pour the batter. Decorate the surface with almonds flakes.
  • Allow to bake for 30-35 minutes. Check if it is done by inserting a toothpick after the surface turns golden brown,the toothpick should come out clean.
